Ingredients

Yields 15 macarons

  • For the shells – use a kitchen scale (I promise this makes a big difference!)
    • 75 grams Almond Flour
    • 75 grams Powdered Sugar
    • 56 grams Egg Whites room temp (about 1 1/2 large egg whites)
    • 50 grams Granulated Sugar
    • 1-3 drop Food Coloring (pending how dark you want the color)
    • 1/4 tsp Cream of Tartar (optional)
    • Fresh Lavender (optional)
  • For the filling
    • 1 stick of Butter
    • 2 tablespoons of Honey
    • 1.5-2 cups of powdered sugar

Instructions

  • 1.Sift dry ingredients
    Sift together almond flour and powdered sugar to create a smooth, lump-free mixture.
  • 2.Make the meringue
    Add sugar gradually to the egg white on a medium speed then set to the second highest or highest speed to form a super stiff meringue (approx 5-6 minutes)
  • 3.Add flavor + color
    Gently fold in finely ground lavender and a small amount of food coloring if desired approx 2 minutes before the meringue is finished.
  • 4.Macaronage (folding stage)
    Add half the meringue to the dry ingredients and incorporate, then add your second half and finish your macaronage
  • 5.Pipe the shells
    Pipe small circles onto a parchment-lined baking sheet.
  • 6.Rest the macarons
    Let them sit at room temperature until a skin forms (about 30–60 minutes).
  • 7.Bake
    Bake at 300°F (150°C) for 13–15 minutes, until feet have formed and shells are set.
  • 8.Cool completely
    Let shells cool before removing from parchment.
  • 9.Make the filling
    Prepare lavender filling by mixing all ingredients. Then pipe onto half the shells.
  • 10.Assemble
    Sandwich with remaining shells and gently press together.

  • Avoid overmixing or undermixing the batter
  • Let shells rest fully before baking
